By 10:30 the standup is over, and the tray is still on the table.

Breaktray is a production kitchen in Holon. A sweet tray, a savoury tray, and a coffee urn, set out before anyone sits down. We are not a hall, and we do not take weddings.

Three things we actually do

Brew, bake, deliver.

Brew

The urn is filled last, in Holon, so the first drop is still worth drinking at 08:30. Twelve cups is ₪228. Milk and oat ride in a cold sleeve. They are not poured into the coffee before the Ayalon, where they would split.

Bake

The dough was mixed the afternoon before. At 04:30 the buns, the walnut rugelach and the honey loaf go into the oven. The small sweet tray is ₪286. From May through October it travels under a cloth, not in a sealed tin.

Deliver

One address, one window. The first van is 08:00–09:15. The second is 09:30–11:00. We wait ten minutes at the dock, then we call. The crate comes back the same day, between 13:30 and 16:00.

Oven

04:30, Sunday to Friday. The street outside HaMerkava is still dark.

Cold board

Sandwiches after the bread has cooled. Cheese, egg, vegetables. No meat.

Urn

Filled last, so it is hot at the dock and not stewed from 05:00.

Van

Loaded by 07:15. One tower. The second tower is a second order.

Lull

By 10:30 the standup is over. The tray is still on the table.

Crate

Cups, linens and steel come back between 13:30 and 16:00.

The kitchen has no kashrut certificate. If your office needs a certificate, ask before you order. We cannot give you one. A request goes out from the order page, and it is a request until someone in the kitchen writes back.
